Super Smoked Wings

Making these for the big Husker-Badger football game (evening of September 29, 2012). 
Gonna get them rolling during the MSU-Ohio State afternoon game.   Bonus:  ESPN College Game Day is broadcasting from the campus of MSU all morning!

Using a  recipe is based on the wings at Super Smokers.


The Meat
10 pounds of wings (from Sam's Club)
     Get these 2-3 days before your smoke day.  They need to thaw.

The Spices for overnight dry rub
  • 5 tablespoons ground black pepper
  • 2 tablespoon onion powder
  • 2 tablespoon chili powder
  • 2 tablespoon garlic powder
  • 2 tablespoon seasoned salt 
The Sauce for day of
  • 2 cups honey
  • 1 cup barbecue sauce
         I like to make some with hot BBQ sauce and others with Raspberry Chipotle
  • 6 tablespoons apple juice

The Smoke
Preheat smoker to 250.  Wait to add Hickory chunks until right after you put the meat on.

Smoke for 30 minutes. Turn the wings and smoke for another 30 minutes (you'll probably need to add more hickory at this point).

Mix the honey, barbecue sauce, and apple juice together in a small saucepan. Cook over medium heat until warmed through.

Place the wings in a disposable foil pan(s) and pour the warm sauce over the wings. Toss to coat evenly. Cover and smoke for at least another 30 minutes, stirring occasionally, until the glaze is finished the way you like it.
